For classical, vocals and instrumentals I think a Jadis Orchestra Reference (or a DA60, if you can find one, afford it and have the space for it) would be a nice choice.

If no one else responds, I'd either contact Jadis directly via e-mail on their website (they have been helpful to me in the past) or, if you're in North America, perhaps Pierre Gabriel, the importer. Does your seller know how to bias the tubes?

I think you need to re-bias the amp to change the tube type, it's not like the mono amps (JA-30/80/200) which have an auto-bias and can accept various types of tubes without any adjustment. Can't tell you how to bias the amp, though.
