I-tunes vs. Exact copy

Is there any difference in the quality of a burned CD on these two programs?

iTunes is primarily a digital juke box that allows you to import music, create playlists and share music but it does allow you to burn CDs. It's aimed at formats other than .WAV files - like MP3, AAC, Apple Lossless; although supports uncompressed digital.

Exact Audio Copy is mainly a way of reading digital music off a CD. It does have CD writing software linked in, but many people use other writing software to good (or better) effect. The power of EAC lies in its ability to get the music off the CD onto your hard drive. You can then convert it, compress it or burn it. You could then add the files to iTunes to play its role as a digital jukebox.
