Have to cast another vote for Shel. Saw them in Northern Michigan and highly recommend them. The "Battle of Evermore" cover is really outstanding. I also enjoy "Going to California" https://www.youtube.com/watch?v=62L5kn1qFeY Slaw mentions Patricia Barber and while "A Taste of Honey" is one of my favorites, her cover of "Autumn Leaves" is absolutely breathtaking. If you don't want to listen to the whole thing, "Autumn Leaves" starts at the 20:50 mark... https://www.youtube.com/watch?v=KVSV0xu0P8U And one last suggestion is unfortunately one that you will never hear but I saw a singer/songwriter out of Northern Minnesota named Andrew Newton who performed what is as far as I'm concerned, THE definitive version of Leonard Cohen's Hallelujah.
